Can anyone point me to documentation related to the reliability (or durability) of firestore documents. How often can I expect to loose a document due to a backend failure of some kind?

You won't expect to see a backend failure if you have rules setup and the correct methods, you can expect firestore to atleast retry a request if no connection is made to the database. I would say that you can expect a firestore to fail in the following scenarios.
A) Internet infrustructure breakdown, local database and internet relay stations can be harmed by natural causes such as fire, earthquake and other unforseen circumstances.
B) A major DDoS attack against Google that would match government levels of CPU power
C) Major outage, a bug is rolled out in firestore or google that temporarily breaks firebase projects and Google Cloud Projects
